Very interesting piece from The New York Times providing perspectives on the industrialization of food in Brazil. It highlights how the obesity epidemic is underway resulting from the move to highly processed food that is flavored to maximize eater satisfaction, but at a cost to human health. Sad to see. We totally agree with the epidemiologist who cites loss of diversity in the diet as a major force in the epidemic. Be sure to watch the video embedded in the piece. It is fantastic.
